The Pecorino di Parco Migliarino is a mild cheese made from whole sheep's milk from sheep breeds reared in the Park, according to organic farming and non-intensive. Production techniques, unchanged for years expect that sheep are fed mainly with fodder made from pastures, supplemented with other products to not more than 20% and milked twice a day. The milk collected is then heated to 35° C, centrifuged to remove impurities and then pasteurized.
The selection of breeds, care in their food and seasoning of cheese on wood boards give the pecorino of the park a unique flavor, sweeter than the others, making it a high-quality product. Fits perfectly with mature red wines and with another excellence product of Migliarino, honey.
