A curious name that well describes the appearance of this famous variety of beans: the seeds have, in fact, a black speck around the point where they attach to the pod.
Origin of beans from the eye
The bean from the eye is often confused with the green beans, but it is a different species. It is the only native bean of the Old World,in fact it is native to Africa and Asia; known already by the ancient Greeks and Romans and widely cultivated in our country during the Middle Ages. At one time, eye beans were very consumed and, until a few decades ago, appeared on our tables; now, however, they have almost disappeared and are grown only in some areas of Puglia, Tuscany and Veneto.
Properties and benefits
Like their borlottirelatives, the beans from the eye are very rich in protein (in the dry state contain about 23%), but they also have important mineral elements and different vitamins. In addition, they possess a high amount of fiber (about 18%), whose insufficiency, very common in today's diet, is the cause of several diseases such as constipation, intestinal diverticules, hemorrhoids, varicles, diabetes, cardiovascular diseases.
