The processing of bread

Calci, a municipality in the Lower Valdarno has become over time a country of mills and factories. These developed mainly along the streams, exploited the waterways as a workforce, giving life to what took the name of White Art.

The White Art has been and is one of the main activities of the country. From 1500 Calci, thanks to the expansion carried out near the streams, began to produce dough, bread and later pizza.

We talk about Arte Bianca to indicate the processing of bread, pasta making and the transformation of ingredients among which flour is of fundamental importance.
