On 15 August is a day of celebration dedicated to excursions and good food.
In Tuscany there are dishes with which to celebrate this holiday, including the mid-August biscuit: an ancient recipe, particularly widespread in the province of Grosseto.
This cookie has a doughnut shape with an unmistakable taste of anise.
Originally, the mid-August biscuit constituted the mid-afternoon snack of workers employed in wheat threshing operations; a moment of rest and conviviality from work in the fields.
Now, not surprisingly, the "donut" is consumed as part of the festivities the assumption: the ancient Roman calendar holidays established by Emperor Augustus to indicate the rest period agricultural workers.
The recipe is easy, try to follow all the steps to replicate it at home.
Ingredients
- 500 g flour
- 4 eggs
- 100 g sugar
- 20 g of yeast
- 2 tsp Aniseed
- 1 glass of sweet wine
- 4 Tablespoons extra virgin olive oil
- Salt to taste.
Preparation
Place the flour and add:
- the yeast
- previously beaten eggs
- sugar (100 g)
- the aniseed previously macerated in wine, olive oil
- a glass sweet wine.
Knead the dough until it is perfectly blended. At this point then you divide the mixture into equal parts and each forms a round cookie.
Leave the dough to rise for a few hours. Then bake for about 40 minutes baking in oven at 180° c.
One tip, do not open the oven during cooking to keep the temperature of the oven.
