"Matuffi lucchesi" are really exquisite first course that is based on the alternation of layers of soft polenta with meat sauce or with mushrooms.
This delicacy typical of Lucca is perfect to warm up in these winter days, extremely cold temperatures.
Here are the ingredients and the procedure, simple and fast, to make the polenta with sausage with a tomato sauce.
Ingredients for 4 people
- 300 grams of corn flour
- 1 lt of water
- 2 cloves garlic
- Sage
- peeled tomatoes
- salt to taste
- extra virgin olive oil to taste
- grated Parmesan cheese
Procedure
Make a sauce with olive oil, garlic, Sage and then add the peeled tomatoes. The sauce should cook slowly for about a half hour.
Meanwhile, prepare the polenta that once ready serve alternating it with sauce. The last State is sprinkled with plenty of Parmesan.
