Rich vegetable elban dish

Taste a typical dish of tradition is to take a journey through the culture, the traditions and customs of a people. Elban cuisine tell stories of peasants and sailors but also of Etruscan, Roman and peoples of past domination as the Spanish one. The Gurguglione, peasant dish of Elba in vegetables is known locally with some variations that are called Ho or mixed vegetable casserole.

This is a vegetarian recipe with fresh vegetables, typical of the Tuscan countryside such as green pepper, to taste sour, aubergines and courgettes. Usually served as a side dish, but it's also great accompaniment to meat dishes and fish. With a little creativity can be served as an appetizer on top of toasted rustic bread slices.
