The Gurguglione, peasant dish of Elba in vegetables is known locally with some variations that are called Ho or mixed vegetable casserole.
This is a vegetarian recipe with fresh vegetables, typical of the Tuscan countryside such as green pepper, to taste sour, aubergines and courgettes. Usually served as a side dish, but it's also great accompaniment to meat dishes and fish. With a little creativity can be served as an appetizer on top of toasted rustic bread slices.
