Raw cow's milk cheese, is produced with a particular processing that uses the use of "graft milk" (milk left to ripen at room temperature for a few hours).
The curd is placed in square-shaped fuses, so as to obtain similar shapes, precisely, to tiles. The resulting forms are placed in the aging rooms, where they will ding for at least thirty days.
During this period they are washed with serum (residual of the cheese processing itself) saturated with salt, every seven days or so, in order to favor and select the development of mold, which naturally contaminates the product, thus enhancing its flavor.
