The Montemercole Cooperative only processes milk from their farms. By ensuring the very high quality of the raw material, they can carry out, according to the legal rules, the processing of "raw milk", i.e. without pasteurization, thus maintaining the valuable nutritional and sensory characteristics present naturally in milk.
Raw milk pecorino cheese is a semi-seasoned cheese, hard but not dry. The dough is compact with a slight eye, the strong flavor, "whole", as it once was.
