The Olivo Quercetano is a variety native to the town of Querceta, in the commune of Seravezza.
Its origins are very old and have contributed to the spread of olive growing in the area, for thousands of years among the primary sources of economic subsistence.
This variety also remembers for a historic dispute between Pisa and Lucca: the oil was used as an important bargaining chip with the Arabs, assuming a value comparable to money.
Olivo Quercetano plant, listed the Presidio Slow Food, looks strong with long leaves, a lustrous green color. Its olives, small ovoid shape and slightly pointed, it produces a fruity and delicate, with a taste perfectly balanced between bitter and spicy.
