Lampredotto fiorentino is a typical product of the beautiful city of Florence. Has always been considered a "poor food" because it is accessible to all, thanks to the return of appreciation today has undergone popular cuisine. The Lamprey is a meat, part of the stomach of the adult bovine that only in Florence and the neighbouring countries is retained to create tasty dishes. This particular product is handed down in its aromas from the "lampredottaio" or "trippaio fiorentino", the only ones able to exalt the flavours of this soft flesh.
The stories related to this dish tell of a very ancient culture associated to the need of the poor to find cheap protein; its rediscovery makes today a flagship product of Florentine cuisine. Although the classic way to eat it is inside a burger seasoned with salt, pepper and salsa verde, today it can be found in many variations. Tuscan mixed boiled meats or as a condiment of pennette. Emblem of street food, this special meat can be eaten even in the ancient Inns of Tuscany or in family restaurants of the area.
