The tasty bun with a specialty Made in Tuscany and specifically of Siena.
Between a walk in Piazza del Campo, a visit to the Town Hall and the Cathedral is a must stop in one of the many "ciaccinerie" bakeries in town to sample the King of Dunks.
This bread, soft inside and crisp and Golden outside, is perfect at any time of the day. There are those who cannot do without it at breakfast, who enjoy for lunch, snack or dinner maybe sat admiring the Torre del Mangia.
Is prepared with simple ingredients, Tuscan tradition:
- flour
- yeast
- extra virgin olive oil
- fine salt or coarse
The best known variant is the one with ham. Here's the recipe.
Ingredients for a square baking sheet approximately 40 × 40:
- 450 g flour 00 (or 400 g and 50 g 00 manitoba)
- 4 Tablespoons extra virgin olive oil
- 10 g fresh yeast
- 1/4 teaspoon sugar
- 1/2 teaspoon fine salt
- 170-180 ml lukewarm water
for the filling
- 150 g cooked ham
- 200 g sliced cheese on your plate type
- 100 g mozzarella
for brushing
- extra virgin olive oil
- Salt
Preparation
You can prepare the dough a couple of hours before baking, should not rise much. In the bowl of a planetary (or doing well in the flour) Add the water (which you do dissolve fresh yeast and sugar) to the flour. Add the oil and after a few minutes, at the end, Add the salt. Knead until the mixture is smooth and homogeneous and put into a plastic bowl to rise covered with film. After about an hour and a half take the dough and divide into 2 loaves, spread half into a baking dish well oiled and stuffed with slices of ham, cheese and mozzarella cheese into thin slices. Replace with the other half of the dough, pressing the edges. Prick well with a fork and brush with an emulsion of olive oil and salt, stretching out well with a brush or your fingers.
Let stand on bun with senese for a half hour, the time that the oven will warm well. Bake at 200 degrees for about 20 minutes, until the surface is golden. If during cooking should swell prick with a fork.
Serve on bun with ham senese in square pieces, just like in bakeries are served.
