"Farinata di cavolo nero", a taste of Tuscany

Tuscan black cabbage and corn flour are the main ingredients of this tasty dish

"Farinata di cavolo nero" is a delicious traditional recipe of our beautiful region.

The preparation is quick and easy and the results are excellent, in fact, the porridge with black cabbage is a dish that satisfies even the most discerning palates!

 

What are the ingredients to use and preparation?

 

Ingredients for 4 people:

  • 600 grams (2 bunches) of "cavolo nero toscano" - tuscan black cabbage
  • 250 g of corn flour 
  • 2 onions
  • 2 carrots
  • 2 sticks of celery
  • 1 tablespoon of tomato paste
  • extra virgin olive oil
  • salt to taste
  • 1 clove
  • hot pepper

 

Preparation:

  • Make a sauce with celery, onion, carrot, pepper and clove
  • Cook over low heat, until the different smells you wilt
  • Meanwhile, clean and wash "tuscan black cabbage" and cut it into thin strips rather thin and add it to the rest along with the tomato paste. Add salt as required and cook with water for about 45 minutes
  • when "tuscan black cabbage" is cooked add the polenta flour and stir frequently so as not to make lumps. Let Cook slowly for another 40 minutes or so
  • Serve with a drizzle of extra virgin olive oil
