The drying of cob is natural without the use of artificial heat sources that would significantly reduce the quality of the flours, once dried the cob is ginned by hand and the seeds are left to dry on sheets in dry places.
Grinding takes place in an artisanal way in stone mills. From this type of maize is obtained a flour more intregrale than conventional corn flour.
It serves to prepare succulent polenta dishes but it is also delicious roasted on the grill or fried; it can also be used for the preparation of bread, pasta and biscuits.
