The oldest are cavallucci,rustic biscuits, followed by the most refined BIRIQUOCOLI,for more delicate palates: spicy biscuits with flour and honey, nuts and anici, later enriched with candied fruit and hazelnuts. Born in the fourteenth century and the object of homage to the Knights of the Lordship of the Republic of Sienese, they owe their name perhaps to the custom of imprinting on the still fresh pasta the imprint of a horse, a use, this, now abandoned. The origin, of the name cavalluccio can also trace back to the fact that in the taverns of the time, where stagecoaches and barrocciai stopped, it was sold as tickling on the palate, and also as an invitation to drink together a "red", of the good one or even a "vinsanto" of caratello. Today they are manufactured simplified in shape, but very soft and improved in taste.
Cavallucci are the confectionery product obtained from the craftsmanship of a dough based on excellent raw materials including flour, candied fruit, sugar, nuts, honey, anici; the treats are formed manually and then cooked in the oven. Next they are packaged.
