The Pastinocello is a carrot typical of Versilia. This vegetable has a sweet flavor with a nutty flavor and texture is more substantial and the color, yellow, is much lighter than the traditional carrots.

The cultivation of "Pastinocello" was widespread in the province of Lucca in the period between the two world wars. The cultivation has greatly reduced over the decades and at present the "Pastinocello" is grown only by "amateurs". The Pastinocello shows a dense root and the leaves are approximately 30 cm. Normally the root is used in feeding and leaves, tender and flavorful, are excellent eaten fresh, boiled to make omelettes and diuretic teas.
