ON THE BANKS OF THE RIVER BISENZIO
The municipal territory develops at a flat level, in the central part of the Florence-Prato-Pistoia flat and is crossed from North to South by the river Bisenzio.
It is along the banks of the river that the history of Campi Bisenzio can be retraced. Around Pieve di Santo Stefano, in fact, in the year one thousand was born and developed in the shadow of the rock, the first town and formed the "peoples" of Campi,. The expansion of fields can be dated from the year 1000, with the rise of the first clusters but is in the twentieth century that real transformation takes place with the advent of industrialization.
Traditions
Survive albeit without the features of yesteryear the processing of straw and its products (hats, bags) that was so important to the economy of the area until after World War II.
Typical products
The most traditional and well-known is the "pecora alla campigiana", used as a condiment for pasta. It's stewed or with sauce, this dish simple leave pleasantly surprised, especially for the tasty way locals to cook it. The municipality also contends the authorship of finocchiona in Greve in Chianti; typical are finally "le campigiane", round pastry filled with custard.
