TERRITORY OF PROVENIENZA: San Gimignano, Montaione, Gambassi spa
HISTORY: Created by Ferrucio Fornai (2nd generation) in 1990 following the decision to move the sale of Chianti wine from bulk to bottled.
HARVEST: By hand in the first decade of October and anyway when the grapes have an optimal phenolic maturity.
UVE FROM CUI IS PRODUCT: 80% Sangiovese, 10% Canaiolo, 5% color, 5% Trebbiano (As first discipline Chianti)
VINIFICATION: In stainless steel tanks with contact fermentation of the skins for about 20 days, optimal time for extraction with frequent replacements, polyphenol components, representatives of the color and sensory quantity of the wine.
RELATED:Scrupulous control of malolactic fermentation in stainless steel tanks for 6 months after which it is allowed to ferment for another 6 months in a bottle in a dark environment and at controlled temperature.
