The harvesting process follows the ancient Tuscan traditions: starting from the second half of October, the fruits are picked from the trees exclusively by hand that, at the end of the day, are brought to the mill. Here, through meticulous processing to keep the flavors unchanged,our oil is born. Subsequently the product is stored in a special cellar dug into the rock, which guarantees a constant temperature throughout the year and protection from light. Finally, the oil is bottled under nitrogen, to ensure that each drop has the same taste and scent as the one just crushed.
Throughout the year our plants are cared for by the Fontana Family, guaranteeing each of them maximum lighting to promote the processes of photosynthesis, and the full nourishment of mineral salts, adopting exclusively biological and sustainable interventions.
In Aurum oil, in addition to a balanced taste, you can perceive the scent of over 300 years of history of olive trees, the flavor of ancient peasant techniques, and the color of the dreams of the Fontana Family.
