Sanoner and a minimal amount of wooded apple. It has a viscous, clear and bright appearance and an intense brown color. The smell is characteristic, persistent and pleasantly acetic. The taste, on the other hand, is bittersweet, balanced and pleasant. Sangiovese wine, obtained from the vinification of our grapes in the Tenuta winery, continues its natural acetification process in Modena, the home of the famous balsamic vinegar.
The strong vinegar originating from the acetification of our highest quality wine is mixed with cooked musts and balsamic vinegar at least 12/20 years old resulting, among other things, from batteries of Traditional Balsamic Vinegar composed of barrels with different types of woods. Each of these precious woods (chestnut, cherry, oak) goes to imprint its note to the bouquet of the mixture.
The particular mixture of our trusted acetate is then inserted into a specific battery of three ancient mulberry barrels (90 -120- 160 lt.) with different and progressive density and acidity where it continues to refine for long periods. Subsequently the combination of our Strong Vinegar and the particular mixture is mixed in two Slavonia Oak barrels (225 -150 lt.), dedicated exclusively to the Sanoner Estate.
